Breakfast Balls


These are super tasty
& they are packed full of energy!
I've seen a bunch of different versions of breakfast balls,
but this recipe is a combination of others using ingredients I had on hand (:

1 cup peanut butter
3 bananas
1/4 cup honey
1 tsp vanilla
2 1/2 cups oats
1/2 cup coconut
1/4 cup chocolate chips
1/4 cup craisins
powdered sugar (optional - to coat)

Heat peanut butter, bananas, & honey in a large microwavable bowl for 30 seconds. Mash bananas & stir in vanilla. Stir in oats, coconut, chocolate chips, & craisins one ingredient at a time until each is completely coated. Roll into balls 1" or 1 1/2" in diameter. If desired, roll balls in powdered sugar, then refrigerate to set. Makes approximately 35 balls.

Saturday Dishes - Turkey & Thanksgiving


This week's theme is:

Let me tell you a story...
Once upon a time I lived in Tucson, Arizona.
It was almost Thanksgiving.
We were driving somewhere when when I saw a street ad
for this delicious local restaurant chain called Eegee's.
It was a picture of their turkey sub & the words 'gobble gobble'.
It was in that moment that I put two & two together.
Yes people.
That was the exact moment when I realized that turkey was turkey.
What I mean by that is that I recognized that lunch meat turkey
is the same as the turkey we eat on Thanksgiving.
Gobble gobble.

Southwest Fondue


Justin whipped this together one day
& I absolutely fell in love with it!
He didn't write down the amounts of ingredients he used
so this actual recipe was something I came up with while attempting to recreate it.
This makes a lot, but you could easily half the recipe if you didn't want to make so much.
I keep the leftovers in our fridge & just reheat small amounts when I want some.

3 cups cheese
1 cup salsa
1 cup sour cream
1/2 cup ranch
1/2 tsp garlic powder
1/2 tsp onion powder
1/8 tsp chili powder

Use a hand blender to combine all ingredients except for cheese. Add cheese & heat in saucepan over medium heat until cheese is melted. Use hand blender again to help even the texture before serving. Keep warm over low heat, stirring occasionally.

So far I have tried it with tortilla chips, pretzels, breakfast burritos, quesadillas & my personal favorite... Chicken Bacon Ranch Taquitos! It tasted amazing with all of them (:
